Vegan White Chocolate Recipe
Ingredients
Makes about 1 cup
- 1/2 cup food-grade cocoa butter
- 1/2 cup confectioners sugar
- 2 tablespoons soy milk powder
- 2 teaspoons pure vanilla extract
Method
- Lightly oil a small baking sheet and set aside
- In a medium bowl, combine the sugar and soy milk powder
- Set aside
- Melt the cocoa butter in the top of a double boiler over medium heat
- Once it is melted, stir in the sugar and soy milk mixture and cook, stirring constantly, until the dry ingredients are dissolved and the mixture is smooth and well blended
- Turn off the heat
- Mix in the vanilla, stirring until blended
- Scrape the mixture onto the prepared baking sheet and set aside or refrigerate to cool completely, about 1 hour
- Break into pieces, then transfer to a tightly sealed container and refrigerate until needed
- Properly stored, it will keep for 1 to 2 weeks
