Vegan White Chocolate Recipe

Ingredients

Makes about 1 cup

  • 1/2 cup food-grade cocoa butter
  • 1/2 cup confectioners sugar
  • 2 tablespoons soy milk powder
  • 2 teaspoons pure vanilla extract

Method

  1. Lightly oil a small baking sheet and set aside
  2. In a medium bowl, combine the sugar and soy milk powder
  3. Set aside
  4. Melt the cocoa butter in the top of a double boiler over medium heat
  5. Once it is melted, stir in the sugar and soy milk mixture and cook, stirring constantly, until the dry ingredients are dissolved and the mixture is smooth and well blended
  6. Turn off the heat
  7. Mix in the vanilla, stirring until blended
  8. Scrape the mixture onto the prepared baking sheet and set aside or refrigerate to cool completely, about 1 hour
  9. Break into pieces, then transfer to a tightly sealed container and refrigerate until needed
  10. Properly stored, it will keep for 1 to 2 weeks
