Chocolate-Banana Fudge
Ingredients
Makes about 36 pieces
- 1 ripe banana
- ¾ cup vegan semisweet chocolate chips
- 4 cups confectioners sugar
- 1 teaspoon pure vanilla extract
Method
- Line an 8-inch square baking pan with enough waxed paper or aluminum foil so that the ends hangover the edge of the pan
- (This will help you get the fudge out of the pan later
- ) Set aside
- Place the banana in a food processor and blend until smooth
- Melt the chocolate chips in a double boiler or microwave, then add to the pureed banana along with the sugar and vanilla and process until smooth
- Scrape the mixture into the prepared pan
- Smooth the top and refrigerate until firm, at least 2hours
- Once chilled, grip the waxed paper, lift the fudge from the pan and transfer it to a cutting board
- Remove and discard the waxed paper
- Cut the fudge into small pieces and serve
- Cover and refrigerate any leftovers
