Vegan Tomatillo Salsa Recipe
Ingredients
Makes about 1 1/2 cups
- 5 tomatillos, husked and chopped
- 1/3 cup chopped sweet yellow onion
- 1/3 cup chopped fresh cilantro
- 1 small jalapeno, seeded and minced
- 1 tablespoon fresh lime juice
- 1 tablespoon whole capers, plus 1 teaspoon minced
- 1/2 teaspoon salt
Method
- In a glass bowl, combine all the ingredients, mix well, cover and set aside for 30 minutes before serving or cover and refrigerate until ready to use
- Properly stored, it will keep in the refrigerator for up to 2 days
