Ingredients
Makes 8 servings
- 1 1/2 cups vegan graham cracker crumbs
- 1/4 cup vegan margarine, melted
- 2 (8-ounce) containers vegan cream cheese, room temperature
- 1 ripe Hass avocado, pitted and peeled
- ¾ cup sugar
- 1 tablespoon fresh lemon or lime juice
- 1 teaspoon pure vanilla extract
Method
- Grease a 9-inch springform pan
- Place the crumbs in the bottom of the pan, add the margarine and mix with a fork to blend
- Press the crumb mixture into bottom and sides of pan and set aside
- In a food processor, combine the cream cheese, avocado, sugar, lemon juice and vanilla and blend until smooth
- Pour the avocado mixture into the prepared crust and refrigerate for 4 hours until set
- Keep refrigerated
