Vegan No-Bake Avocado Cheesecake Recipe

Ingredients

Makes 8 servings

  • 1 1/2 cups vegan graham cracker crumbs
  • 1/4 cup vegan margarine, melted
  • 2 (8-ounce) containers vegan cream cheese, room temperature
  • 1 ripe Hass avocado, pitted and peeled
  • ¾ cup sugar
  • 1 tablespoon fresh lemon or lime juice
  • 1 teaspoon pure vanilla extract

Method

  1. Grease a 9-inch springform pan
  2. Place the crumbs in the bottom of the pan, add the margarine and mix with a fork to blend
  3. Press the crumb mixture into bottom and sides of pan and set aside
  4. In a food processor, combine the cream cheese, avocado, sugar, lemon juice and vanilla and blend until smooth
  5. Pour the avocado mixture into the prepared crust and refrigerate for 4 hours until set
  6. Keep refrigerated
