Ingredients
Makes 10 crepes
- 1 1/3 cups plain or vanilla soy milk
- 1 cup all-purpose flour
- 1/3 cup firm tofu, drained and crumbled
- 3 tablespoons vegan margarine, melted
- 2 tablespoons sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- canola or other neutral oil, for cooking
Method
- In a blender, combine all the ingredients (except the oil for cooking) and blend until smooth
- Heat a nonstick medium skillet or crepe pan over medium-high heat
- Coat the pan with a small amount of oil
- Pour about 3 tablespoons of the batter into the center of the skillet and tilt the pan to spread the batter out thinly
- Cook until golden on both sides, flipping once
- Transfer to a platter and repeat with the remaining batter, oiling the pan as needed
- The crepes can now be used in the recipes below or topped with your favorite dessert sauce or sauteed fruit
- These taste best if used on the same day that they are made
