Vegan Dessert Crepes Recipe

Ingredients

Makes 10 crepes

  • 1 1/3 cups plain or vanilla soy milk
  • 1 cup all-purpose flour
  • 1/3 cup firm tofu, drained and crumbled
  • 3 tablespoons vegan margarine, melted
  • 2 tablespoons sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • canola or other neutral oil, for cooking

Method

  1. In a blender, combine all the ingredients (except the oil for cooking) and blend until smooth
  2. Heat a nonstick medium skillet or crepe pan over medium-high heat
  3. Coat the pan with a small amount of oil
  4. Pour about 3 tablespoons of the batter into the center of the skillet and tilt the pan to spread the batter out thinly
  5. Cook until golden on both sides, flipping once
  6. Transfer to a platter and repeat with the remaining batter, oiling the pan as needed
  7. The crepes can now be used in the recipes below or topped with your favorite dessert sauce or sauteed fruit
  8. These taste best if used on the same day that they are made
