Vegan Cucumber Raita Recipe

Ingredients

Makes about 2 1/2 cups

  • 1 cup plain vegan yogurt
  • 1 medium English cucumber, peeled and chopped
  • 1 tablespoon minced green onion
  • 2 tablespoons minced fresh mint leaves
  • salt

Method

  1. In a medium bowl, combine the yogurt, cucumber, green onion and mint
  2. Season with salt, to taste and stir to combine
  3. Serve immediately
  4. If not serving right away, cover and refrigerate until needed, but use within a few hours after making or the raita will become watery from the cucumber
