Ingredients
Makes about 2 1/2 cups
- 1 cup plain vegan yogurt
- 1 medium English cucumber, peeled and chopped
- 1 tablespoon minced green onion
- 2 tablespoons minced fresh mint leaves
- salt
Method
- In a medium bowl, combine the yogurt, cucumber, green onion and mint
- Season with salt, to taste and stir to combine
- Serve immediately
- If not serving right away, cover and refrigerate until needed, but use within a few hours after making or the raita will become watery from the cucumber
