Nutty Nut Burgers

Ingredients

Makes 4 burgers

  • 2 tablespoons plus 1 teaspoon olive oil
  • 1 small onion, chopped
  • 1 medium carrot, grated
  • 1 cup unsalted mixed nuts
  • 1/4 cup wheat gluten flour (vital wheat gluten), plus more if needed
  • 1/2 cup old-fashioned oats, plus more if needed
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 burger rolls
  • 4 lettuce leaves
  • 1 ripe tomato, cut into 1/4-inch slices

Method

  1. In a medium skillet, heat 1 teaspoon of the oil over medium heat
  2. Add the onion and cook until soft, about 5 minutes
  3. Stir in the carrot and set aside
  4. In a food processor, pulse the nuts until chopped
  5. Add the onion-carrot mixture along with the flour, oats, peanut butter, parsley, salt and pepper
  6. Process until well blended
  7. Shape the mixture into 4 equal patties, about 4 inches in diameter
  8. If the mixture is too loose, add a little more flour or oats
  9. In a large skillet, heat the remaining 2 tablespoons oil over medium heat, add the burgers and cook until browned on both sides, about 5 minutes per side
  10. Serve the burgers on the rolls with lettuce and tomato slices
