Nutty Nut Burgers
Ingredients
Makes 4 burgers
- 2 tablespoons plus 1 teaspoon olive oil
- 1 small onion, chopped
- 1 medium carrot, grated
- 1 cup unsalted mixed nuts
- 1/4 cup wheat gluten flour (vital wheat gluten), plus more if needed
- 1/2 cup old-fashioned oats, plus more if needed
- 2 tablespoons creamy peanut butter
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 burger rolls
- 4 lettuce leaves
- 1 ripe tomato, cut into 1/4-inch slices
Method
- In a medium skillet, heat 1 teaspoon of the oil over medium heat
- Add the onion and cook until soft, about 5 minutes
- Stir in the carrot and set aside
- In a food processor, pulse the nuts until chopped
- Add the onion-carrot mixture along with the flour, oats, peanut butter, parsley, salt and pepper
- Process until well blended
- Shape the mixture into 4 equal patties, about 4 inches in diameter
- If the mixture is too loose, add a little more flour or oats
- In a large skillet, heat the remaining 2 tablespoons oil over medium heat, add the burgers and cook until browned on both sides, about 5 minutes per side
- Serve the burgers on the rolls with lettuce and tomato slices
