Vegan Bites Recipe
Ingredients
Makes 4 :Servings (ABOUT 24 BITES)

- 11/3 cups unsweetened almond milk
- 1/4 cup almond butter with oil or peanut butter or cashew butter
- 1 tablespoon sugar-free maple syrup or agave nectar or honey
- 1 tablespoon ground flaxseed
- 2 teaspoons baking powder
- pinch of sea salt.
- 11/3 cups whole wheat flour or oat flour
- cooking spray.
- 1 cup blueberries
Method
- Preheat the oven to 350°F
- Spray the mini muffin cups with cooking spray
- Add the batter ingredients to the blender in this order: almond milk, almond butter, maple syrup, flaxseed, baking powder, salt, and whole wheat flour, and blend until smooth
- Evenly divide the batter among the prepared molds
- Top each muffin with a few blueberries, then bake in the oven for 25 to 30 minutes, or until the tops are golden brown and a toothpick comes out clean when a muffin is pierced
- Allow the bites to cool before removing them from the muffin pan
- Store them in an airtight container or resealable plastic bag for up to 5 days in the fridge or 1 month in the freezer
