Un-Sausage And Pasta Soup Recipe

Ingredients

  • Serving Size : 1
  • 5 cups vegetable broth
  • 1 package Morningstar links – sliced (vegetarian sausage substitute)
  • 1 medium onion – chopped
  • 3 green onions – thinly sliced
  • 1 bell pepper (your choice of color) – diced
  • 2 bay leaves
  • 1/2 teaspoon lemon pepper (or some black pepper and a dash of lemon juice)
  • 1 thinly sliced serrano chilis (or more – or another variety – if you like)
  • 1 cup small shell pasta
  • 1 cup frozen peas

Method

  1. In a large pot, combine veg broth, links, onion, green onion, bell pepper, bay leaves, lemon pepper, and serrano.
  2. Simmer for 20 minutes.
  3. Add pasta shells and simmer another 7 to 9 minutes, until cooked tender.
  4. Add peas and heat to warm.
  5. Ladle into bowls and serve.
