Ingredients
- Serving Size : 1
- 5 cups vegetable broth
- 1 package Morningstar links – sliced (vegetarian sausage substitute)
- 1 medium onion – chopped
- 3 green onions – thinly sliced
- 1 bell pepper (your choice of color) – diced
- 2 bay leaves
- 1/2 teaspoon lemon pepper (or some black pepper and a dash of lemon juice)
- 1 thinly sliced serrano chilis (or more – or another variety – if you like)
- 1 cup small shell pasta
- 1 cup frozen peas
Method
- In a large pot, combine veg broth, links, onion, green onion, bell pepper, bay leaves, lemon pepper, and serrano.
- Simmer for 20 minutes.
- Add pasta shells and simmer another 7 to 9 minutes, until cooked tender.
- Add peas and heat to warm.
- Ladle into bowls and serve.
