Tuna Stuffed Potatoes Recipe

Ingredients

  • Serving Size : 2
  • 2 large potatoes
  • 2 tablespoons butter
  • 1 large clove garlic – minced
  • 2 tablespoons flour
  • 1/2 cup chicken broth
  • 1/2 cup milk or half and half
  • 1/2 cup monterey jack cheese – 2 oz
  • 1 can diced jalapeno,chilies – un
  • 2 tablespoons minced scallions – green parts
  • salt to taste
  • fresh ground white pepper to
  • 1 can tuna – drained 6 to 7 oz

Method

  1. Wash and dry potatoes well.
  2. Rub each with 1 1/2 tsp butter.
  3. Bake potatoes in a 425 degreesoven 30 minutes.
  4. Remove and pierce in a few places with fork tines.
  5. Return to oven and continue baking until potatoes are tender,about 30 minutes longer.
  6. About 15 minutes before potatoes are done,melt remaining 1 1/2 tabls butter in medium pan
  7. Add garlic and saute over medium heat 2 to 3 minutes.
  8. Add flour and stir to form a paste.
  9. Gradually stir in chicken broth and milk,stirring constantly.
  10. Cook over medium heat,stirring frequently,until mixture is thickened and smooth.
  11. Stir in cheese and cook over low heat until cheese melts.
  12. Stir in chilies with any liquid and scallions.
  13. Season to taste with salt and pepper.
  14. Simmer,uncovered,5 minutes,stirring occasionally.
  15. To serve,split each potato in halF
  16. Arrange two halves to a plate.
  17. Make a vertical slash in each potato halF
  18. Fill each with 1/4 of the tuna.
  19. Spoon some or all of cheese sauce.
