Tropical Mug Cake Recipe
Ingredients
Recipe for: Tropical Microwave Mug Cake (MMC)
- 1 egg
- 1 tablespoon pineapple yogurt fruit stirred in
- 1 tablespoon banana yogurt fruit stirred in
- 1 tablespoon oil
- 1/8 teaspoon coconut extract or vanilla extract
- 1/8 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 3 tablespoons light brown sugar
- 2 tablespoons instant banana pudding powder unprepared
- 4 tablespoons all-purpose flour
- 2 tablespoons shredded coconut
Method
- Grease the mug lightly with butter, margarine, oil or cooking spray
- Use a small bowl to mix ingredients
- Beat the egg with a fork then mix in the rest of the liquid ingredients
- Add the dry ingredients and mix well
- Pour the batter into the mug, no more than halfway
- Smooth the top with a spoon if you intend to frost your tropical mug cake
- Place a damp cloth on the work surface and bang the mug gently but firmly five or six times to remove air bubbles
- Put the mug on a small plate in the microwave and your mug cake is ready to bake
- Cook your mug cake for 3 to 4 mins according to your microwave and personal taste
- Is it done? Insert a small sharp knife into middle of the mug cake
- If the knife comes out clean, the mug-cake is done
- Wait 2 mins, then use a blunt knife to loosen the mug cake and turn it onto plate
- Position the mug cake so that the slightly rounded top is on top
- Your Tropical Mug Cake should look a bit like a large muffin
Variation.Frost the Mug Cake with pineapple yogurt or banana yogurt, or carefully cut the mug cake in two, and frost each half individually
- Decorate, if you wish, with shredded coconut
