Ingredients
- 4 slices rustic bread
- 2 ripe plum tomatoes, halved
- 2 tablespoons Spanish extra-virgin olive oil
- 4 ounces garrotxa (Spanish goat’s-milk cheese from Catalonia), thinly sliced
- sea salt to taste
Method
- Toast the bread in a broiler or over a grill
- When the bread is browned, rub each piece of toast with the cut surface of a tomato half until all the flesh is grated
- Discard the skins
- Arrange the toasts on a platter and drizzle them with 1 tablespoon of the olive oil
- Lay the slices of cheese on top of the tomato
- Drizzle with the remaining tablespoon of olive oil and season to taste with sea salt
