Tomato Toast With Garrotxa Cheese Spanish Recipe

Ingredients

  • 4 slices rustic bread
  • 2 ripe plum tomatoes, halved
  • 2 tablespoons Spanish extra-virgin olive oil
  • 4 ounces garrotxa (Spanish goat’s-milk cheese from Catalonia), thinly sliced
  • sea salt to taste

Method

  1. Toast the bread in a broiler or over a grill
  2. When the bread is browned, rub each piece of toast with the cut surface of a tomato half until all the flesh is grated
  3. Discard the skins
  4. Arrange the toasts on a platter and drizzle them with 1 tablespoon of the olive oil
  5. Lay the slices of cheese on top of the tomato
  6. Drizzle with the remaining tablespoon of olive oil and season to taste with sea salt
