Tofu With Lemongrass Snow Peas Recipe
Ingredients
Makes 4 servings
- 3 tablespoons canola or grapeseed oil
- 1 medium red onion, halved and thinly sliced
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 1 pound extra-firm tofu, drained and cut into 1/2-inch dice
- 3 tablespoons soy sauce
- 1 tablespoon mirin or sake
- 1 teaspoon sugar
- 1/2 teaspoon crushed red pepper
- 8 ounces snow peas, trimmed
- 1 tablespoon minced lemongrass or zest of 1 lemon
- 2 tablespoons coarsely ground unsalted roasted peanuts, for garnish
Method
- In a large skillet or wok, heat the oil over medium-high heat
- Add the onion, garlic and ginger and stir-fry for 2 minutes
- Add the tofu and cook until golden brown, about 7 minutes
- Stir in the soy sauce, mirin, sugar and crushed red pepper
- Add the snow peas and lemongrass and stir-fry until the snow peas are crisp-tender and the flavors are well blended, about 3 minutes
- Garnish with peanuts and serve immediately
