Crock Pot Tomato Chicken Tinga Slow Cooker

Ingredients

  • 2 lbs. chicken breast
  • 1/2 large onion, minced
  • 4 cloves garlic, minced
  • 1.5 cups diced tomatoes with green
  • chiles
  • 3 tbsp chipotle salsa or blended
  • chipotles
  • 1/2 tsp salt

Method

  1. Place the chicken breast in the crock pot
  2. Add all other ingredients and mix well
  3. Allow the ingredients to cook for about 4 hours on high
  4. Transfer the chicken onto a platter and shred using a fork
  5. Mix in some juice and tomatoes from the cooked mixture onto the shredded chicken
  6. Serve warm
