Peachy Thumbprint Cookies

Ingredients

Makes about 2 dozen cookies

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 2 tablespoons vegan margarine, softened
  • 1/4 cup applesauce
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup confectioners sugar, plus additional for dusting cookies
  • 1/2 cup peach fruit spread or jam

Method

  1. Preheat the oven to 400°F
  2. In a large bowl, combine the flour, baking powder, cinnamon, allspice and salt
  3. In a medium bowl, whisk together the margarine, applesauce and vanilla, then add the sugar and mix well
  4. Add the wet ingredients to the dry ingredients and mix to form a smooth stiff dough
  5. With lightly floured hands, roll the dough into 1 1/2-inch balls and place them on an ungreased baking sheet about 2 inches apart
  6. Press your thumb into the center of each dough ball to make an indentation and fill it with 1/2 teaspoon of the peach fruit spread
  7. Bake until golden, 12 to 15 minutes
  8. Remove from oven and cool on the baking sheet for 10 minutes, then remove to a wire rack and dust with confectioners sugar
  9. When completely cool, store in an airtight container
