Peachy Thumbprint Cookies
Ingredients
Makes about 2 dozen cookies
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon salt
- 2 tablespoons vegan margarine, softened
- 1/4 cup applesauce
- 1/2 teaspoon pure vanilla extract
- 1/2 cup confectioners sugar, plus additional for dusting cookies
- 1/2 cup peach fruit spread or jam
Method
- Preheat the oven to 400°F
- In a large bowl, combine the flour, baking powder, cinnamon, allspice and salt
- In a medium bowl, whisk together the margarine, applesauce and vanilla, then add the sugar and mix well
- Add the wet ingredients to the dry ingredients and mix to form a smooth stiff dough
- With lightly floured hands, roll the dough into 1 1/2-inch balls and place them on an ungreased baking sheet about 2 inches apart
- Press your thumb into the center of each dough ball to make an indentation and fill it with 1/2 teaspoon of the peach fruit spread
- Bake until golden, 12 to 15 minutes
- Remove from oven and cool on the baking sheet for 10 minutes, then remove to a wire rack and dust with confectioners sugar
- When completely cool, store in an airtight container
