Chocolate Chip Cookie Dough Cheesecake

Ingredients

For Crust:

  • 1 1/2 cups finely crushed chocolate wafer cookies
  • 1/4 cup melted butter
  • 2 tablespoons white sugar

For Cookie Dough:

  • 1/4 cup butter
  • 1/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 cup semisweet chocolate chips

For Cheesecake:

  • 1 cup white sugar
  • 2 (8 ounce) packages cream cheese, diced
  • 1 cup sour cream
  • 3 eggs
  • 1 teaspoon vanilla extract

For Topping:

  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 2 teaspoons sugar

Method

  1. Preheat oven to 3505F
  2. In a large bowl combine crushed cookies, sugar and butter
  3. Press into the bottom and ½ inch up the sides of a 9 inch springform pan
  4. Bake for 8 minutes
  5. In a large mixing bowl, beat butter and both sugars until smooth
  6. Add in water and vanilla
  7. Beat in flour until combined
  8. Stir in chocolate chips
  9. Set aside
  10. In a large mixing bowl, beat cream cheese and sugar until smooth
  11. Add in sour cream, eggs and vanilla until well combined
  12. Pour into crust
  13. Drop cookie dough in 2 tablespoon portions evenly over the top of the cake, pushing dough beneath the surface
  14. Bake for 40 minutes, until center is almost set
  15. Whisk together all topping ingredients and spread over warm cake
  16. Cool, cover and chill overnight
