Chocolate Chip Cookie Dough Cheesecake
Ingredients
For Crust:
- 1 1/2 cups finely crushed chocolate wafer cookies
- 1/4 cup melted butter
- 2 tablespoons white sugar
For Cookie Dough:
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 1/4 cup white sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 cup semisweet chocolate chips
For Cheesecake:
- 1 cup white sugar
- 2 (8 ounce) packages cream cheese, diced
- 1 cup sour cream
- 3 eggs
- 1 teaspoon vanilla extract
For Topping:
- 1 cup sour cream
- 1 teaspoon vanilla
- 2 teaspoons sugar
Method
- Preheat oven to 3505F
- In a large bowl combine crushed cookies, sugar and butter
- Press into the bottom and ½ inch up the sides of a 9 inch springform pan
- Bake for 8 minutes
- In a large mixing bowl, beat butter and both sugars until smooth
- Add in water and vanilla
- Beat in flour until combined
- Stir in chocolate chips
- Set aside
- In a large mixing bowl, beat cream cheese and sugar until smooth
- Add in sour cream, eggs and vanilla until well combined
- Pour into crust
- Drop cookie dough in 2 tablespoon portions evenly over the top of the cake, pushing dough beneath the surface
- Bake for 40 minutes, until center is almost set
- Whisk together all topping ingredients and spread over warm cake
- Cool, cover and chill overnight
