Ingredients
- 1 cup (185 g) uncooked long-grain rice
- 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
- 1 can (6 ounces, or 170 g) no-salt-added tomato paste
- 700 ml water
- 2 tbsps (15 g) salt-free mexican seasoning
- 4 boneless skinless chicken breasts, cut into 1-inch 2
- 5 cm) cubes 1½ cups (240 g chopped onions
- 1 cup (150 g) chopped green bell pepper
- 115g diced green chilies
- 1 tsp garlic powder
- ¼ teaspoon pepper
Method
- Combine all ingredients in large slow cooker
- Cover and cook on low 4 to 4½ hours or until rice is tender and chicken is cooked
- Yield: 8 servings
- Per serving: 285 g water; 178 calories (5% from fat, 27% from protein, 69% from carb)
