Taco Salmon Pasta Seafood Recipe
Ingredients
- 1 can salmon — (14-3/4 oz.)
- or 2lb shrip, peeled
- 1 pound pasta — cooked in unsalted
- — water
- 2 cups salsa
- 4 ounces low fat sour cream
- 4 teaspoons fresh cilantro — chopped
- 2 ounces low fat cheddar cheese — grated
- 1 teaspoon ground cumin
- 4 tablespoons lightly crushed tortilla chips
- salt and pepper — to taste
Method
- Mix salsa, cumin and salmon in a large sauce pot; stir and heat through
- Add the warm pasta; stir and heat through again
- Taste, adding salt and pepper as necessary
- To serve, dish into 4 warm serving bowls
- Top each portion of pasta with 1/2 oz of cheese, 1 oz sour cream and sprinkle with 1 tbsp of tortilla chips and 1 tsp of cilantro
