Taco Salmon Pasta Seafood Recipe

Ingredients

  • 1 can salmon — (14-3/4 oz.)
  • or 2lb shrip, peeled
  • 1 pound pasta — cooked in unsalted
  • — water
  • 2 cups salsa
  • 4 ounces low fat sour cream
  • 4 teaspoons fresh cilantro — chopped
  • 2 ounces low fat cheddar cheese — grated
  • 1 teaspoon ground cumin
  • 4 tablespoons lightly crushed tortilla chips
  • salt and pepper — to taste

Method

  1. Mix salsa, cumin and salmon in a large sauce pot; stir and heat through
  2. Add the warm pasta; stir and heat through again
  3. Taste, adding salt and pepper as necessary
  4. To serve, dish into 4 warm serving bowls
  5. Top each portion of pasta with 1/2 oz of cheese, 1 oz sour cream and sprinkle with 1 tbsp of tortilla chips and 1 tsp of cilantro
