Swiss Parmesan Potato Casserole Recipe
Ingredients
- Serves 6
- 1 1/4 cups grated parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 6 potatoes, peeled and thinly sliced
- 6 tablespoons butter
- 1/2 cup cream
- 1/2 cup grated Swiss cheese 2 tablespoons chopped chives
Method
- Preheat oven to 400 degrees F
- Mix together parmesan cheese, salt and pepper
- Layer potatoes in a buttered 2-quart casserole dish, sprinkling each layer with the cheese mixture
- Dot with butter and cover tightly with foil, bake for one hour
- Uncover and pour cream over the top
- Sprinkle with Swiss cheese
- Bake uncovered for 5 minutes until cheese melts
- Sprinkle with chives before serving
