Swiss Parmesan Potato Casserole Recipe

Ingredients

  • Serves 6
  • 1 1/4 cups grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 potatoes, peeled and thinly sliced
  • 6 tablespoons butter
  • 1/2 cup cream
  • 1/2 cup grated Swiss cheese 2 tablespoons chopped chives

Method

  1. Preheat oven to 400 degrees F
  2. Mix together parmesan cheese, salt and pepper
  3. Layer potatoes in a buttered 2-quart casserole dish, sprinkling each layer with the cheese mixture
  4. Dot with butter and cover tightly with foil, bake for one hour
  5. Uncover and pour cream over the top
  6. Sprinkle with Swiss cheese
  7. Bake uncovered for 5 minutes until cheese melts
  8. Sprinkle with chives before serving
