Ingredients

  • 3 pounds (1.3 kg) chicken breast halves, skinned
  • ¾ cup (213 g) frozen lemonade concentrate, thawed
  • 3 tbsps (45 g) packed brown sugar
  • 3 tbsps (45 g) low-salt ketchup
  • 1 tbsp (15 ml) vinegar
  • 2 tbsps (16 g) cornstarch
  • 2 tbsps (15 ml) cold water

Method

  1. Place chicken in slow cooker
  2. In a medium bowl combine lemonade, brown sugar, ketchup, and vinegar
  3. Pour over chicken
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 3½ hours
  5. Transfer chicken to a serving platter; cover and keep warm
  6. Pour cooking liquid into a medium saucepan
  7. Skim off fat
  8. Combine cornstarch and the water; stir into liquid in saucepan
  9. Cook and stir over medium heat until thickened and bubbly
  10. Cook and stir for 2 minutes more
  11. Spoon sauce over chicken
  12. Yield: 6 servings
  13. Per serving: 180 g water; 484 calories (16% from fat, 60% from protein, 24% from carb)
  14. Serve with hot cooked rice
