Sweet Potato Vichyssoise Recipe
Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 2 medium leeks, white parts only, well rinsed and chopped
- 3 large sweet potatoes, peeled and chopped
- 3 cups vegetable broth or water
- salt
- pinch ground cayenne
- 1 cup plain unsweetened soy milk, or more as needed Snipped fresh chives, for garnish
Method
- In a large soup pot, heat the oil over medium heat
- Add the leeks and cook until soft, about 5minutes
- Add the sweet potatoes, broth and salt and cayenne to taste
- Bring to a boil, then reduce heat to low and simmer, uncovered, until the potatoes are soft, about 30 minutes
- Puree the soup in the pot with an immersion blender or in a blender or food processor, in batches if necessary
- Transfer to a large container and stir in the soy milk
- Cover and refrigerate until chilled, at least 3 hours
- Taste, adjusting seasonings if necessary and adding a bit more soy milk if the soup is too thick
- Ladle into bowls, sprinkle with chives and serve
