Strawberry Irish Cream Cheesecake Recipe

Ingredients

For Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons butter, melted
  • 3 tablespoons sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/4 cup Bailey’s Irish cream liqueur
  • 4 large eggs
  • 1 1/4 cups sour cream, divided
  • 3 tablespoons strawberry preserves

Method

  1. Preheat oven to 325F
  2. In a large bowl, combine graham cracker crumbs, butter and sugar
  3. Press into the bottom of a greased, 9 inch springform pan
  4. Bake for 10 minutes
  5. Remove and cool
  6. Reduce oven to 300F
  7. In a large mixing bowl, beat together cream cheese, sugar, and flour until smooth
  8. Add in vanilla, Bailey’s and eggs, one at a time, until just combined
  9. Add in ¾ cup sour cream until blended
  10. Pour half of the batter into the crust
  11. Spoon strawberry preserves over batter and use knife to gently swirl together
  12. Top with remaining batter
  13. Bake for 55 minutes, until center is almost set
  14. Cool in unheated oven for 15 minutes
  15. Cool, cover and chill overnight
  16. Spread remaining sour cream over top of cheesecake
  17. Garnish suggestion – fresh strawberry slices
