Ingredients
- 2 large tomatoes
- 1 cup (160 g) chopped onion
- ¾ cup (75 g) chopped celery
- ½ cup (75 g) chopped green bell pepper
- 2 tbsps (39 g) sugar
- bay leaf
- 1/8 teaspoon black pepper
Method
- Core tomatoes; place in boiling water for about 15 to 20 seconds and then plunge into ice water to cool quickly; peel
- Cut tomatoes in wedges
- In slow cooker, combine tomatoes and remaining ingredients
- Cover and cook on low 8 to 9 hours
- Remove bay leaf
- Serve as a side dish or freeze in portions for soups or other recipes
- Yield: 6 servings
- Per serving: 141 g water; 61 calories (5% from fat, 8% from protein, 87% from carb)
