Spinach Casserole Slow Cooker Recipe

Ingredients

  • 560g frozen spinach, thawed and drained
  • 450 g fat-free cottage cheese
  • ½ cup (112 g) unsalted butter, cut into pieces
  • 1½ cups (173 g) cubed Cheddar cheese
  • ¾ cup (175 ml) egg substitute
  • ¼ cup (31 g) flour

Method

  1. Spray slow cooker with nonstick cooking spray
  2. Combine all ingredients in a bowl and pour into prepared slow cooker
  3. Cover and cook on low for 4 to 5 hours
  4. Yield: 6 servings
  5. Per serving: 188 g water; 398 calories (63% from fat, 25% from protein, 11% from carb)
