Spicy Vegetable Soup Slow Cooker Recipe

Ingredients

Serves 4

Active Time 10 minutes

Pressure/Manual (Low) Natural/Quick Release

  • 2 cups cauliflower florets (3-inch pieces)
  • 1 large onion, chopped into 2-inch pieces
  • 1 cup chopped carrots, turnips, or potatoes (2-inch pieces)
  • 1 cup chopped tomatoes
  • 1 to 1½ teaspoons Sambhar Spice Mix
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 2 cups water

Method

  1. In the Instant Pot, combine the cauliflower, onion, carrots, tomatoes, spice mix, salt, and turmeric
  2. Stir to combine
  3. Secure the lid on the pot
  4. Close the pressure-release valve
  5. Select MANUAL and set the pot at LOW pressure for 3 minutes
  6. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
  7. Gradually stir in the water to thin the soup to the desired consistency
