Pressure/Manual (Low) Natural/Quick Release
- 2 cups cauliflower florets (3-inch pieces)
- 1 large onion, chopped into 2-inch pieces
- 1 cup chopped carrots, turnips, or potatoes (2-inch pieces)
- 1 cup chopped tomatoes
- 1 to 1½ teaspoons Sambhar Spice Mix
- 1 teaspoon salt
- 1 teaspoon ground turmeric
- 2 cups water
Method
- In the Instant Pot, combine the cauliflower, onion, carrots, tomatoes, spice mix, salt, and turmeric
- Stir to combine
- Secure the lid on the pot
- Close the pressure-release valve
- Select MANUAL and set the pot at LOW pressure for 3 minutes
- At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
- Gradually stir in the water to thin the soup to the desired consistency
