Ingredients
- 225g diced green chilies, undrained
- 1 cup (120 g) sliced zucchini
- 1 cup (160 g) thinly sliced onion
- ½ teaspoon minced garlic
- 1 tsp cumin
- 2 360 g diced onion
- 2 L low-salt vegetable broth
- 2 480 g no-salt-added canned chickpeas, rinsed and drained
- 10 ounces 280 g frozen corn
- 1 tsp oregano
- ½ cup (30 g) chopped fresh cilantro
Method
- Combine all ingredients in slow cooker
- Cook on low 4 hours
- Yield: 6 servings
- Per serving: 349 g water; 177 calories (15% from fat, 24% from protein, 62% from carb)
