Ingredients

- 1 tablespoon salad oil
- 1 medium onion – chopped
- 1 medium green pepper – chopped, optional
- 1 pound extra-lean ground beef
- 1 cup enriched regular long-grain rice
- 1 can kidney beans – (16 oz)
- 1 can tomatoes – (16 oz)
- 1 teaspoon salt
Method
- In large skillet over medium heat, in hot oil, cook onion and pepper, 5 minutes or until tender.
- Add ground beef and cook until browned, stirring occasionally.
- Stir in remaining ingredients; heat to boiling.
- Reduce heat to low; cover and simmer 25 minutes or until rice is tender, stirring occasionally.
