Ingredients
- 1 onion, diced
- 2 cloves garlic, sliced
- 2-3 tbsp. butter
- 1 c. cooked rice (or Minute Rice)
- 1 can chilies, diced
- 1/2 brick Monterey Jack cheese, sliced in thin strips
- 1/2 brick Mozzarella cheese, sliced in thin strips
- 2 cans beef broth
Method
- Saute onion and garlic in butter
- Add rice, mix thoroughly
- In casserole dish spread a thin layer of rice, then chilies, then cheeses
- Repeat
- Pour beef broth over layers
- Bake at 350 degrees for 1 hour
