Simple Indian Pudding Slow Cooker Recipe

Ingredients

  • 250 g flour
  • 4 L milk, heated
  • 1 cup (140 g) cornmeal
  • 1 cup (340 g) dark molasses
  • ¼ cup (50 g) sugar
  • ¼ cup (55 g) unsalted butter
  • ¼ teaspoon baking soda
  • ½ cup (120 ml) egg substitute

Method

  1. Mix half of hot milk with rest of ingredients in a saucepan over medium heat and heat to boiling
  2. Add rest of milk
  3. Transfer to slow cooker
  4. Cook for 6 hours on low
  5. Yield: 6 servings
  6. Per serving: 257 g water; 462 calories (18% from fat, 11% from protein, 72% from carb)

Serve with a scoop of vanilla ice cream
