Shrimp Soup Seafood Recipe

Ingredients

  • 1 onion — chopped
  • 1 potato — diced
  • 2 tablespoons butter or margarine
  • 2 tablespoons flour
  • 1 cup water
  • 2 1/2 cups milk
  • 12 ounces pink shrimp — (about 2-1/2 cups)
  • 3/4 cup frozen peas — thawed
  • 2 tablespoons minced parsley
  • salt and pepper

Method

  1. Microwave Directions: Combine onion, potato and butter in 2-quart microwave-proof dish
  2. Microwave at high 4 minutes
  3. Add flour; stir to blend
  4. Gradually stir in water; microwave at high 3 minutes
  5. Add milk; microwave at high 1 minutes
  6. Stir in shrimp, peas, parsley and salt and pepper to taste
  7. Microwave at high 3 to 4 minutes or until thoroughly heated
  8. Stovetop Directions: Saute onion and potato in butter about 5 minutes or until onion is tender
  9. Stir in flour; cook 1 minute
  10. Gradually stir in water; simmer until potatoes are barely tender
  11. Stir in milk and heat
  12. Add shrimp, peas, parsley and salt and pepper to taste; heat thoroughly
