Shrimp Fritters Spanish Recipe

Ingredients

  • 4 cups spanish extra-virgin olive oil
  • ½ cup chickpea (garbanzo) flour
  • ½ cup all-purpose flour
  • ? teaspoon sweet pimenton (spanish smoked paprika)
  • 1 teaspoon salt
  • 1 tablespoon minced onion
  • 1 tablespoon minced fresh flat-leaf parsley leaves
  • 1 cup flat mineral or filtered water
  • ¼ cup vodka
  • ½ pound frozen whole tiny (1-inch) shrimp, defrosted
  • 2 teaspoons coarse sea salt

Method

  1. In a medium pot over medium-high heat, heat the olive oil until it measures 350°F on a candy thermometer
  2. Sift the chickpea and all-purpose flours together in a mixing bowl, and season with the pimenton and salt
  3. Add the onion and parsley to the flours and mix well
  4. Slowly pour in the water and vodka, stirring constantly to prevent any lumps from forming
  5. The mixture should be similar to a very thin pancake batter
  6. Fold the shrimp into the batter
  7. Using a 3-ounce ladle, spoon the batter into the hot oil
  8. The batter will begin to break apart in the oil
  9. Using a slotted spoon, push the pieces of batter together against one side of the pot until the fritter begins to stick together
  10. At this moment, turn the fritter over in the oil
  11. Allow the fritter to fry until golden brown, about 3 minutes
  12. Transfer the fritter to a paper towel-lined plate to drain
  13. Sprinkle with sea salt and keep warm
  14. Repeat with the remaining batter, making sure the oil returns to 350°F between batches
  15. The batter will yield 10 to 12 fritters
  16. Serve immediately
