Ingredients
- 4 boneless, skinless chicken breasts 1 1/4 tsp cumin
- 1 tbsp chili powder
- 1/2 tsp coriander
- 1/4 tsp paprika
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup chicken broth
- 1/3 cup (packed) cilantro leaves, chopped
- 2 limes
- 1 large onion, chopped 1 jalapeno, seeded and minced
- 4 garlic cloves, minced
- 1 tbsp olive oil
Method
- Pour the oil into a skillet and heat well
- Toss in the onion and temper for about 5-6 minutes
- Mix in the seasonings and spices and leave for another 2-3 minutes
- Pour the chicken broth and deglaze the skillet to remove any remnants
- Season the chicken with seasonings and place in the crock pot
- Drizzle the lime juice and add the jalapeno and cilantro and mix well
- Pour the onion mixture on top of the ingredients and leave for 3-5 hours on low
- Transfer the cooked meat, shred and leave aside
- Spoon the onion mixture over the meat
- Serve in tortillas with avocado, lettuce, tomato, cilantro, onion and cheese
- Can be eaten with sour cream and salsa as required
