Shredded Crock-Pot Chicken Slow Cooker Recipe

Ingredients

  • 4 boneless, skinless chicken breasts 1 1/4 tsp cumin
  • 1 tbsp chili powder
  • 1/2 tsp coriander
  • 1/4 tsp paprika
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup chicken broth
  • 1/3 cup (packed) cilantro leaves, chopped
  • 2 limes
  • 1 large onion, chopped 1 jalapeno, seeded and minced
  • 4 garlic cloves, minced
  • 1 tbsp olive oil

Method

  1. Pour the oil into a skillet and heat well
  2. Toss in the onion and temper for about 5-6 minutes
  3. Mix in the seasonings and spices and leave for another 2-3 minutes
  4. Pour the chicken broth and deglaze the skillet to remove any remnants
  5. Season the chicken with seasonings and place in the crock pot
  6. Drizzle the lime juice and add the jalapeno and cilantro and mix well
  7. Pour the onion mixture on top of the ingredients and leave for 3-5 hours on low
  8. Transfer the cooked meat, shred and leave aside
  9. Spoon the onion mixture over the meat
  10. Serve in tortillas with avocado, lettuce, tomato, cilantro, onion and cheese
  11. Can be eaten with sour cream and salsa as required
