Rustic Sandwich Bread Recipe

Ingredients

Makes 1 LOAF

  • 1/2 cup whole milk
  • 5 tbsps. unsalted butter
  • 3 cups all-purpose flour
  • 2 tbsps. granulated sugar
  • 1 tsp salt
  • 2 tsps. instant yeast

Method

  1. Heat the milk just to a boil in a small saucepan over medium high heat
  2. Remove from the heat and stir in the butter until melted
  3. Add 1/2 cup cold water to the milk
  4. Combine the flour, sugar, salt and yeast in the bowl of a stand mixer (or in a large bowl if kneading by hand)
  5. Add the milk mixture and mix to combine
  6. Switch to the dough hook (or turn the mixture onto a lightly floured surface) and knead for 8 minutes, until dough is elastic
  7. Transfer the dough to a lightly greased bowl and turn over to coat the top
  8. Cover the bowl and allow the dough to rise in a warm place until doubled, about 1 1/2-2 hours
  9. Lightly grease an 8 1/2 x 4 1/2-inch loaf pan
  10. On a lightly floured surface, press the ball of dough into an 8 x 12-inch rectangle
  11. Starting at a short end, fold it into thirds, as if folding a letter
  12. Repeat again, tucking in the ends of the loaf
  13. Place the dough seam side down into the pan and cover loosely with buttered plastic wrap
  14. Allow the dough to rise in a warm place above the edge of the pan until it has doubled in size and will spring back slowly when poked with a finger, about 1-1 1/2 hours
  15. Preheat the oven to 375 degrees F
  16. Bake the bread for 30-35 minutes, until the top is golden brown
  17. Turn the loaf out of the pan onto a wire rack to cool before slicing
