Ingredients
- 30 vanilla wafers, finely crushed
- 3 tablespoons butter or margarine, melted
- 1/2 teaspoon ground cinnamon
- 1 envelope Knox unflavored gelatin
- 1 can (8 oz.) crushed pineapple, drained, liquid reserved
- 3 packages (8 oz.) cream cheese, softened
- 3/4 cup sugar
- 1 tub (8 oz.) whipped topping, thawed
Method
- Preheat oven to 400F
- In a large bowl, combine crushed wafers, butter and cinnamon
- Press into the bottom of a 9 inch springform pan
- In a small saucepan, stir together gelatin and reserved pineapple liquid over low heat, until gelatin is dissolved
- In a large mixing bowl, beat cream cheese and sugar until smooth
- Add in gelatin mixture
- Refrigerate until slightly thickened
- Whisk pineapple and whipped topping into cream cheese mixture
- Spoon into crust
- Cover, and chill overnight
