  • 3/4 cup sugar
  • 1 teaspoon grated lemon rind
  • 3 eggs, beaten
  • 1/4 cup lemon juice
  • 1 drop yellow food coloring

Method

  1. In a double boiler, simmer butter, sugar, rind, eggs and lemon juice for 5 minutes, stirring frequently, until thickened
  2. Remove from heat and stir in food coloring
  3. Strain mixture and chill for 2 hours
