Ingredients
- ¼ cup (38 g) finely chopped green bell pepper
- ½ cup (80 g) finely chopped onion
- 1 cup (235 ml) low-salt vegetable broth
- 2 1 cups 490 g pureed pumpkin
- 475 ml skim milk
- ¼ teaspoon thyme
- ¼ teaspoon nutmeg
Method
- Combine all ingredients in slow cooker and mix well
- Cover and cook on low 5 to 6 hours
- Yield: 6 servings
