Ingredients

  • ¼ cup (38 g) finely chopped green bell pepper
  • ½ cup (80 g) finely chopped onion
  • 1 cup (235 ml) low-salt vegetable broth
  • 2 1 cups 490 g pureed pumpkin
  • 475 ml skim milk
  • ¼ teaspoon thyme
  • ¼ teaspoon nutmeg

Method

  1. Combine all ingredients in slow cooker and mix well
  2. Cover and cook on low 5 to 6 hours
  3. Yield: 6 servings
  4. Per serving: 204 g water; 75 calories (8% from fat, 26% from protein, 65% from carb)
