Pumpkin Pudding Slow Cooker Recipe

Ingredients

  • 1 can (15 ounces, or 420 g) unsweetened pumpkin
  • 1½ cups (355 ml) fat-free evaporated milk
  • ¼ cup (50 g) sugar
  • ¼ cup (31 g) Heart-Healthy Baking mix
  • ½ cup 120 ml egg substitute
  • 2 tsps pumpkin pie spice
  • 1 tsp lemon peel

Method

  1. Combine all ingredients in slow cooker sprayed with nonstick cooking spray
  2. Stir until lumps disappear
  3. Cover and cook on low 3 hours
  4. Serve warm or cold
  5. Yield: 8 servings
  6. Per serving: 95 g water; 104 calories (7% from fat, 23% from protein, 70% from carb)
