Ingredients
- 1 can (15 ounces, or 420 g) unsweetened pumpkin
- 1½ cups (355 ml) fat-free evaporated milk
- ¼ cup (50 g) sugar
- ¼ cup (31 g) Heart-Healthy Baking mix
- ½ cup 120 ml egg substitute
- 2 tsps pumpkin pie spice
- 1 tsp lemon peel
Method
- Combine all ingredients in slow cooker sprayed with nonstick cooking spray
- Stir until lumps disappear
- Cover and cook on low 3 hours
- Serve warm or cold
- Yield: 8 servings
- Per serving: 95 g water; 104 calories (7% from fat, 23% from protein, 70% from carb)
