Potato Samosas Recipe

Ingredients

Makes 4 samosas

  • 2 cups all-purpose flour
  • salt
  • ¾ cup water, or as needed
  • 2 tablespoons unsweetened soy milk
  • 4 tablespoons canola or grapeseed oil, plus more for frying
  • 1 pound baking potatoes, peeled and cut into 1/2-inch dice
  • 1 large yellow onion, chopped
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons hot or mild curry powder or garam masala
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cayenne

Method

  1. In a large bowl, combine the flour, 1 teaspoon salt, water, soy milk and 2 tablespoons oil and mix until crumbly
  2. Knead into a dough, adding more water if needed
  3. Cover and set aside for 20 minutes
  4. Steam the potatoes until tender, about 15 minutes
  5. In a large skillet, heat 1 tablespoon of the remaining oil over medium heat
  6. Add the onion, cover and cook until soft, about 7 minutes
  7. Stir in the ginger, curry powder, coriander, turmeric, cayenne and salt to taste
  8. Add the potatoes, stirring to mix well and mash the potatoes slightly
  9. Remove from heat and set aside to cool
  10. Roll out the dough into a large rectangle on a floured board
  11. Use a pastry cutter or a knife to cut the dough into 5-inch squares
  12. Place a spoonful of the filling mixture into the center and fold the dough over, sealing the sides together with a small amount of water
  13. Repeat with remaining ingredients
  14. In a deep skillet, heat a thin layer of oil over medium heat
  15. Fry the samosas, turning once, until golden brown, 2 to 3 minutes per side
  16. Drain on paper towels
  17. If not using right away, the samosas can be reheated in a 350° F oven until hot
