Ingredients
- Serves: 8
- 1 cup red lentils, rinsed
- 2 potatoes, cut into cubed
- 1 cup brown lentil, rinsed
- 1 large onion, diced
- 1/2 tsp turmeric
- 1/2 tsp cumin seeds, toasted
- 1 tsp sugar
- 14 oz can tomato, diced
- 14 oz can coconut milk
- 1 tbsp garlic, minced
- 1 tsp ginger, minced
- 2 tbsp butter
- 2 tbsp curry powder
- 1/2 tsp red pepper flakes
Method
- Add all ingredients except coconut milk into the slow cooker and stir well.
- Add water into the slow cooker to cover lentil mixture.
- Cover and cook on high for 4 hours.
- Add coconut milk and stir well.
- Serve warm and enjoy.
