Potato And Leek Soup Slow Cooker Recipe
Ingredients
- 12 large potatoes, cubed
- 2 leeks, washed and cut up
- ½ cup (80 g) chopped onion
- ½ cup (65 g) grated carrot
- ¼ cup (25 g) chopped celery
- 1 tbsp (1.3 g) parsley
- 475 ml water
- 2 L vegetable broth
- ¼ teaspoon pepper
- 1/3 cup (75 g) unsalted butter
- 370 ml evaporated milk
Method
- Chopped chives
- Put all ingredients into slow cooker or soup pot except milk and chives
- Cook 10 to 12 hours on low or 4 to 6 hours on high
- Stir in evaporated milk during last hour
- To serve, sprinkle with chives
- Yield: 6 servings
- Per serving: 594 g water; 549 calories (32% from fat, 10% from protein, 58% from carb)
