Ingredients
- 8 to 10 med. potatoes, cubed and boiled in skins
- 1 lb. Velveeta cheese
- 1/2 c. finely chopped onion
- 1 sm. jar chopped pimientos
- 1 1/2 stick margarine, melted
- 2 tbsp. parsley
- 1 scant tsp. garlic chips
- 4 slices bread toasted and cubed
Method
- Cook potatoes in jackets until done
- Put in a large casserole dish
- Cube cheese and sprinkle over potatoes
- Sprinkle onions, chopped pimientos, parsley and garlic over potatoes and cheese
- Cover with the cubed bread pieces, then pour melted margarine over casserole
- Bake at 350 degrees for 40 minutes
