Portuguese Pickled Pork Recipe
Ingredients
- 1 boneless pork loin roast (about 4 lbs.)
- 1 1/2 c. water
- 1 c. cider vinegar
- 3 sm. dried hot chili peppers, crushed (or 1 tbsp. crushed red pepper)
- 2 cloves garlic, crushed
- 1 1/2 tsp. salt
Method
- Place pork in large heavy plastic bag
- Mix all ingredients
- Pour into bag
- Press out air and seal
- Place in shallow dish and refrigerate overnight, turning pork occasionally
- Remove pork from bag and place on rack in shallow roasting pan
- Pour marinade over
- Bake in preheated oven at 350 degrees for 2 hours or until meat thermometer registers 170 degrees
- Let stand 30 minutes before slicing
