Polynesian Chicken Slow Cooker Recipe
Ingredients
- boneless chicken breasts
- 2 tbsps (28 ml) oil
- 475 ml low-salt chicken broth
- 20 ounces 560 g pineapple chunks
- ¼ cup (60 ml) cider vinegar
- 2 tbsps (30 g) brown sugar
- 2 tsps low-salt soy sauce
- ½ teaspoon minced garlic
- 1 cup (150 g) sliced green bell peppers
Method
- Heat oil in a large skillet over medium-high heat and brown chicken
- Transfer chicken to slow cooker
- Combine remaining ingredients and pour over chicken
- Cover and cook on high 4 to 6 hours
- Yield: 6 servings
- Per serving: 252 g water; 177 calories (29% from fat, 40% from protein, 31% from carb)
