Pineapple Pie Recipe

Ingredients

  • pastry for 2 crust pie
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 1 crushed pineapple and – juice (2 1/2 cups)

Method

  1. Mix in saucepan sugar, salt and cornstarch.
  2. Stir in pineapple.
  3. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  4. Boil 1 minute.
  5. Pour into pastry lined pie pan.
  6. QUICKLY cover with top crust which has slits cut in it.
  7. Bake at 425 for 25-30 minutes.
