Pico De Gallo Roosters Beak Or Salsa Fresca Pressure Cooker Recipe

Ingredients

Makes 3 to 4 cups

  • 4 medium ripe tomatoes (about 1½ pounds), cored and diced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 clove garlic, finely chopped
  • 1 small white or red onion, diced
  • ½ cup chopped fresh cilantro
  • juice of 2 limes.
  • ½ teaspoon dried oregano, preferably Mexican
  • salt to taste.

Method

  1. In a medium bowl, combine all the ingredients
  2. Taste
  3. If the chiles make the salsa too hot, add some more chopped tomato
  4. If not hot enough, carefully add a few of the seeds from the chiles, or add some pure ground chile
  5. Cover and refrigerate for a couple of hours to allow the flavors to develop
  6. Salsa Fresca with Sunflower Seeds: Add 3 tablespoons shelled raw sunflower seeds right before serving
