Mexican Horchata
Ingredients
Makes 4 servings
- 1 cup long-grain white rice
- 1/3 cup sugar
- 2 cups boiling water
- 2 teaspoons pure vanilla extract
- 2 cups chilled rice milk or other dairy-free milk Ground cinnamon, for garnish
Method
- In a blender or spice grinder, grind the rice to a powder and place it in a large heatproof bowl
- Add the sugar, then pour the boiling water over the rice and sugar
- Set aside at room temperature for an hour
- Pour the rice mixture into a blender or food processor and blend until smooth
- Add the vanilla and rice milk and blend until smooth
- Strain the mixture through a fine-mesh strainer and serve over ice
- Serve immediately sprinkled with cinnamon
