Mexican Horchata

Ingredients

Makes 4 servings

  • 1 cup long-grain white rice
  • 1/3 cup sugar
  • 2 cups boiling water
  • 2 teaspoons pure vanilla extract
  • 2 cups chilled rice milk or other dairy-free milk Ground cinnamon, for garnish

Method

  1. In a blender or spice grinder, grind the rice to a powder and place it in a large heatproof bowl
  2. Add the sugar, then pour the boiling water over the rice and sugar
  3. Set aside at room temperature for an hour
  4. Pour the rice mixture into a blender or food processor and blend until smooth
  5. Add the vanilla and rice milk and blend until smooth
  6. Strain the mixture through a fine-mesh strainer and serve over ice
  7. Serve immediately sprinkled with cinnamon
