Seitan Piccata

Seitan Piccata

Ingredients

Makes 4 servings

  • 1 pound seitan cut into 1/4-inch slices
  • salt and freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 1 medium shallot, minced
  • 2 garlic cloves, minced
  • 2 tablespoons capers
  • 1/3 cup white wine
  • 1/3 cup vegetable broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons vegan margarine
  • 2 tablespoons minced fresh parsley

Method

  1. Preheat the oven to 275°F
  2. Season the seitan with salt and pepper to taste and dredge in the flour
  3. In a large skillet, heat 2 tablespoons of the oil over medium heat
  4. Add the dredged seitan and cook until lightly browned on both sides, about 10 minutes
  5. Transfer the seitan to a heatproof platter and keep warm in the oven
  6. In the same skillet, heat the remaining 1 tablespoon oil over medium heat
  7. Add the shallot and garlic, cook for 2 minutes, then stir in the capers, wine and broth
  8. Simmer for a minute or two to reduce slightly, then add the lemon juice, margarine and parsley, stirring until the margarine is blended into the sauce
  9. Pour the sauce over the browned seitan and serve immediately
