Ingredients
- 1 pound (900 g) beef round steak, cut into 2-inch (5 cm) strips
- ½ teaspoon garlic powder
- 3 tbsps (45 ml) olive oil
- 1 tbsp (8 g) cornstarch
- ¼ cup (60 ml) low-salt beef broth
- 1 cup (160 g) chopped onion
- 300 g roughly chopped green bell peppers
- 510 ml no-salt-added stewed tomatoes, with liquid
- 3 tbsps (45 ml) low-salt soy sauce
- 1 teaspoon sugar
Method
- Sprinkle strips of steak with garlic powder
- In a large skillet over medium heat, heat the oil and brown the seasoned beef strips
- Transfer to a slow cooker
- Mix cornstarch into broth until dissolved
- Pour into the slow cooker with meat
- Stir in onion, green pepper, stewed tomatoes, soy sauce, and sugar
- Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours
- Yield: 6 servings
- Per serving: 271 g water; 308 calories (35% from fat, 48% from protein, 17% from carb)
- Serve over brown rice
