Pepper Steak Slow Cooker Recipe

Ingredients

  • 1 pound (900 g) beef round steak, cut into 2-inch (5 cm) strips
  • ½ teaspoon garlic powder
  • 3 tbsps (45 ml) olive oil
  • 1 tbsp (8 g) cornstarch
  • ¼ cup (60 ml) low-salt beef broth
  • 1 cup (160 g) chopped onion
  • 300 g roughly chopped green bell peppers
  • 510 ml no-salt-added stewed tomatoes, with liquid
  • 3 tbsps (45 ml) low-salt soy sauce
  • 1 teaspoon sugar

Method

  1. Sprinkle strips of steak with garlic powder
  2. In a large skillet over medium heat, heat the oil and brown the seasoned beef strips
  3. Transfer to a slow cooker
  4. Mix cornstarch into broth until dissolved
  5. Pour into the slow cooker with meat
  6. Stir in onion, green pepper, stewed tomatoes, soy sauce, and sugar
  7. Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours
  8. Yield: 6 servings
  9. Per serving: 271 g water; 308 calories (35% from fat, 48% from protein, 17% from carb)
  10. Serve over brown rice
