Pecan Pie Cheesecake Recipe

Ingredients

  • 1 refrigerated piecrust, fitted to pie plate
  • 1 (8-oz.) package cream cheese, softened
  • 4 large eggs, divided
  • 3/4 cup sugar, divided
  • 2 teaspoons vanilla extract, divided
  • 1/4 teaspoon salt
  • 1 1/4 cups chopped pecans
  • 1 cup light corn syrup

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, beat together cream cheese, 1 egg, ½ cup sugar, 1 teaspoon vanilla and salt until smooth
  3. Pour into pie crust and sprinkle with chopped pecans
  4. In a medium bowl, whisk together corn syrup and remaining eggs, sugar and vanilla
  5. Pour over batter
  6. Place pie on a baking sheet and bake for 50 to 55 minutes, until pie is set
  7. Cool on a wire rack for 1 hour
  8. Garnish suggestion – whipped topping
