Ingredients
- 1 refrigerated piecrust, fitted to pie plate
- 1 (8-oz.) package cream cheese, softened
- 4 large eggs, divided
- 3/4 cup sugar, divided
- 2 teaspoons vanilla extract, divided
- 1/4 teaspoon salt
- 1 1/4 cups chopped pecans
- 1 cup light corn syrup
Method
- Preheat oven to 350F
- In a large mixing bowl, beat together cream cheese, 1 egg, ½ cup sugar, 1 teaspoon vanilla and salt until smooth
- Pour into pie crust and sprinkle with chopped pecans
- In a medium bowl, whisk together corn syrup and remaining eggs, sugar and vanilla
- Pour over batter
- Place pie on a baking sheet and bake for 50 to 55 minutes, until pie is set
- Cool on a wire rack for 1 hour
- Garnish suggestion – whipped topping
