Ingredients
Makes 4 to 6 servings
- 4 fresh ripe pears, peeled and cored
- 1/2 cup sweetened dried cranberries
- 1/2 cup sugar
- 1/2 teaspoon ground ginger
- 1 tablespoon cornstarch
- 1/4 cup plain or vanilla soy milk
- 2/3 cup coarsely chopped pecans
- 1/4 cup vegan margarine
Method
- Preheat the oven to 400°F
- Lightly grease a 2-quart gratin dish or 9 x 13-inch baking pan
- Cut the pears into 1/4-inch slices and spread them in the prepared dish
- Add the cranberries, sugar, ginger and cornstarch and toss to combine
- Drizzle with the soy milk
- Sprinkle pecans on top and dot with the margarine
- Bake until the fruit bubbles in the center, about 20 minutes
- Serve warm
